- Smoked duck breast, confit beetroot with thyme and garlic, muscavado and red wine vinegar sweet and sour sauce, watercress

Mains -
- Pan fried halibut, dill, parsley and lemon butter sauce, braised fennel and potato purée
- Pan roasted loin of lamb, seaweed crumb, slow roasted tomato and white wine compote, sauté baby new potatoes, black pudding and kale
- Winter vegetable barley risotto, cumin roasted cauliflower, pickled and honey roasted carrots
